To make the rice, just use tomato sauce and water when cooking it instead of just water. I'd say half and half.
So...for one cup of rice, use 1 cup of water and 1 cup of tomato sauce.
Enchiladas with cream sauce instead. Roll up seasoned (use a packet of taco seasoning to 2 lbs. of shredded chicken breast) in flour tortillas and put seam side down.
Combine 1 jar of alfredo sauce with 1 small tub of sour cream. Pour over all of the rolls and cover with foil.
Bake 30 mins on 350.
Remove foil and top with lots of shredded mozzarella cheese.
Put back in oven for 15 more mins.
Serve with cilantro, sour cream, diced tomatoes, lettuce.
